What to do with this Chili?
If you are like me, you make way too much chili. Sure I could freeze it, but I always forget about stuff in my freezer until its got freezer burn. You could give it away, but there are a lot of chili snobs out there so I tread carefully. Here are some ways to use up your delicious, precious chili without getting bored.
My motto is “When in doubt, throw an egg on it”. Add some avocado and/or goat cheese and wrap it up in a tortilla (they freeze wonderfully) or serve over rice. A speedy and great way to start your day!
The way to my heart is to make or buy me nachos. Leftover chili, some pickled jalepenos and chopped tomatoes, greek yogurt or sour cream. NOMS! Don’t share.
I didn’t grow up eating casseroles, but when I finally had them I fell in love. So hearty and so comforting.
So simple, yet so genius.
