Most of my ex-vegetarian friends broke their “edge” because of bacon. Who could resist the smell of smoky, meaty, fatty bacon popping in the skillet? Well the good news to vegetarians and vegans is that scientists have now discovered a seaweed that tastes eerily a lot like bacon.
It’s called dulse and it’s actually not new in the culinary world. “In Europe, they add the powder to smoothies, or add flakes onto food,” researcher at Oregon State University Chris Langdon said. “There hasn’t been a lot of interest in using it in a fresh form. But this stuff is pretty amazing. When you fry it, which I have done, it tastes like bacon, not seaweed. And it’s a pretty strong bacon flavour.”
Dulse is an algae that looks like translucent red lettuce. Scared of seaweed? The baconness might help you get over it. Plus it’s a lot better for you than bacon because it’s packed full of minerals, vitamins and antioxidants — twice the amount of goodies that’s in kale.
I’ve been burned by meat substitutes before, but I’m really curious to try dulse!
