The Best “No-Cook” Breakfast on The Go!

If you are anything like me getting out the door in the morning is always a huge challenge. Most of the time my hair is wet and I’m foraging in my kitchen to see what I can throw in my bag to eat for breakfast. Usually I end up with a greek yogurt and a banana (glamorous, right?) Don’t get me wrong I LOVE greek yogurt and bananas, but let’s face it, that gets old really quick.


So, I’ve been on the hunt for something quick and easy that will keep me full and not bust my calorie budget before my day even starts. I’m fortunate to have so many health conscious friends who post amazing food ideas on Instagram, Twitter, and Facebook. It didn’t take much digging until I found many great ideas — one of my favorites came from my friend Nina who posted a mouthwatering photo of “Overnight Oats.” This particular recipe really intrigued me because of the addition of chia seeds which we all know are an incredible source of protein and fiber. After whipping up a quick batch (I had most of these ingredients already in my kitchen) I realized why this becomes a “ride or die” staple for a quick and healthy breakfast. It is really a matter of mixing everything and then putting in containers overnight in your fridge. In the AM all you need is a spoon. Maybe now I will actually have time to dry my hair — maybe!

Overnight Oats

2 cups rolled oats
2 cups unsweetened almond milk
1/4 cup natural peanut butter
1/2 cup slivered almonds
2 tbs chia seeds
1 teaspoon natural vanilla extract
1 teaspoon cinnamon
1 mashed banana

Combine all ingredients into a bowl and mix together until all ingredients are incorporated. Divide the mixture into individual serving containers. Small mason jars are the perfect fit. Seal tight, refrigerate. The next morning you are a breakfast goddess!
