1Preheat oven to 375.
2Combine beef, onion, egg, bread crumbs, shredded cheese and pepper in a bowl. Mix lightly to combine but don’t over mix.
3Divide meat into 10 pieces. Squash meat into a flat circle. Top with a tablespoon of mac and cheese and one cheddar cheese cube.
4Fold sides up around the cheese, pinching and sealing to form a meatball
5Bake meatballs 25 minutes or so or until the center reaches 160 degrees Fahrenheit with a meat thermometer.
